The Spiced Pineapple Marmalade is our most refined product. Where the Classic Preserve is rustic and chunky, the marmalade is smooth, fine-cut, and aromatic. We shred MD2 pineapple into thin strands and cook them down with freshly grated ginger root — not powdered, not extract, the actual root — and hand-ground Ceylon cinnamon from Sri Lanka. The spice ratio took us over thirty test batches to perfect. Too much ginger and it becomes medicinal. Too much cinnamon and it tastes like holiday candles. The final balance is warm without being aggressive — the pineapple still leads, but the ginger adds a bright, clean heat and the cinnamon rounds out the finish with a woody sweetness. The set is softer than the Classic Preserve, designed to spread thin and melt into warm toast or fresh croissants. We finish each batch with a small amount of lime zest that you won't consciously taste, but you'll notice its absence if we leave it out. It brightens everything.
